My gut feeling says that the text read from file should be treated as native text, and should remain native text. I want plain Mac text files, and plain Mac text, on a Mac. Sure, I like the idea of converting ISO-Latin-1 text files into Mac format or back, or turn any kind of text into UTF8 (the real thing, not native text encoded as UTF8).
