Maybe I didn't investigate too clearly - my understanding was that before I could add a book, I needed to "order" it from "someone", where I would first have to create "someone". Once I "ordered" it, I'd have to say "the order has come in", and only THEN would the book be added to circulation.

You didn't investigate enough.
* in systemprefs, acquisition=normal means what you say. acquisition=simple means => no acquisition, direct cataloguing.
* even if acqui=normal, you can directly add a book with "Add biblio" in Catalogue part of Koha.
* if acquisition=simple, "acquisition" shows you a screen where you can search the biblio in breeding farm (réservoir in french, i don't know the usual word in english), and/or add immediatly an empty one (without searching).

In relation to my magazine/serials question from the previous email,
what is OPAC and does it at all relate to what I'm interested in?

OPAC is public interface. Something like koha.esiee.fr. Usually, the opac is public, and the librarian interface is private (and on a different address / port : koha installer.pl suggests 8080 for librarian and 80 for opac)
