How can you sell a camera if they're essentially being given away with
cell phones to people who largely find that quality 'good enough'?

I think the situation is more grim actually. You see, you spoke about large prints. The vast majority of camera users (I wouldn't call them photographers per se, although still with respect) don't even think about printing.

This article: http://connect.dpreview.com/post/7898834663/landscape-photography-tips-for-smartphone is in my view a sign of times. A pivot if you will.

It is because nowadays 99.9% of photography is consumed on smartphone, phablet or tablet screens. I for one am I about to buy my first tablet either today or tomorrow, seriously. Though I will not use it solely for photography, it will certainly see some such use as I will likely read web sites or eBooks related to photography.

So, the landscape of photography is changing again. For good or for not so good - it is hard to tell. Personally, I expect DSLR markets to shrink as even oldish big sensor compacts are very good already - your Sony NEX and mine Ricoh GXR are evidence for that.

To that end I think that the profile of typical photographic amateur who is not too much concerned with physics will morph just in a few years to come...

Just my two cents here.
