I've seen the histogram change as a result of changing white balance when I'm in Photoshop or Lightroom. So, if the histogram in the camera is based on the embedded jpg, it makes sense that you would get a different histogram with different white balance settings. That probably implies that if you use the histogram you'll get marginally better results if you set the desired white balance in camera while you shoot. Things like those goofy picture styles probably make a difference too. They alter contrast and other settings to get different jpg renderings.
I am thinking that practically one who's particular about the histogram during chimping (which indeed appears to be based on developed JPG file) has to tweak JPG settings in the camera so as to approximate the RAW histogram as close as possible. Another alternative, at least for those who shoot K-5, is to underexpose ever so slightly (-0.3 or -0.7 Ev may do in most of the cases) so as to minimize the possibility of blown out highlights. The rest then can be done in post processing. There is even yet another alternative - in my K-5 with Canon ee-S focusing screen, it seems the screen is a bit brighter than the stock one. So the camera underexposes "automatically". Suits me. I might think that Katz Eye screen with Opti Brite treatment may have similar effect.
