The reason for doing the data imprinting on rewind is to ensure that data is recorded on all frames. The imprinting is done by a single row of emitters - like the pins on a dot matrix printer. This means that you have to run the film over the "print head". If you did this after the shot, you need to pull more film out of the canister. On the last frame there is no more film to pull out, which means doing it that way you would never get data on the last frame.
