At this point, I think what I've been doing is looking for situations where it is way over the top, and exploiting them.. like sunsets. Unfortuantly, the only place I've learned where this looks good is the aforementioned sunsets. I actually bought a couple rolls of Portra 400UC in 120, and perhaps next time I go out and want to shoot colour on a drab day, I'll haul them out.
