Jailbreak means to remove restrictions placed usually by a reseller which change or remove capabilities oribinally placed there by the manufacturer. Kind of like unlocking hidden features the reseller turned off because they don't want you to access them for their own reasons. This is very common in cell phones, and very very common with certain cell carriers such as Verizon.
