Found an article in the Age Green Guide on Thursday which talks about turning 
your Mac into a high quality dictation machine complete with foot pedal.

Why use this? Well the fact is - if you believe the article - a lot of people 
still record lectures or notes and prefer to transcribe them to be printed out 
later on paper etc.

So taking the articles assumptions for granted you need a system on your Mac to 
facilitate this, a Word processing package is obvious but then you need a foot 
pedal and some software to manipulate your audio recordings.

The article details where the new wireless foot pedal and the Express Scribe 
software can be obtained as well as other audio tools you may need.
