The short answer is that the "Developer" choice provides a simplified installer, a set of automatic defaults for most questions (including enabling DHCP by default), and automatic installation of a set of development-related tools (such as the Sun Studio tools). Which package? GNOME? It's not just one package; it's a bunch of them. I'd recommend strongly going with one of the default metaclusters.
