So do I need a SAS HBA controller that supports IT firmware
if I'm going to plug into HP D2600 for an example ?
Or does the controller on the disk box advertise all the drives as
per-disk ?

The only thing I'd say about the DL360G7 is that IIRC there are only two PCIe
slots so if you want more HBAs, or more NICs (it has 4 on the motherboard - bnx
driver), you're a bit constrained.
