If you have a big mailbox (my "All Mail" contains ~150,000 messages),

fast and then it takes a long time to update the header cache.

Google has announced that it is working on support for the CONDSTORE and QRESYNC IMAP extensions, which should help a whole lot for the disconnected use case. It will allow a client to ask "what has changed since I last connected?" rather than the current situation where the metadata for the entire mailbox needs to be fetched to determine flag changes and deleted messages.
