I am using vim. And if I write an E-Mail, like now I could see the ü into your "Grüße" Everthing in VIM is perfect. But if I switch back to mutt every ü is an M-CM-< Also in the mutt menue. That is the point why I could not belive that this is problem with my editor: VIM shows everything correct, VIM accept äöü?, everything OK.
