I use "s" from the index, and mutt asks me where to save the
message...With "?" you can even browse a directory list to find the
right mailbox, and create a new one, or accept that one which is
offered by default. If you fancy, you can setup a save-hook in your
muttrc, mine has been set up in a way, that mutt automatically
knows where to save mail from different incoming mailboxes. 
E.g. I have 4-5 different inboxes and procmail filters messages into
them. From mailing lists I usually save interesting mails to a
mailbox "linux_tips". When I hit "s" on a message, it gets saved
right there. From my personal inbox the messages get saved to a
different folder named "archived". Etc.

Your question with vim :

Put this in your .muttrc: set editor="vim -c 'set tw=68'" 

This will wrap lines at 68 char. You can change that as you like.
