I'm too lazy to download qmail to confirm this guess, but I'm
strongly inclined to bet that the answer is: documentation. Postfix
is very very richly internally documented.

If you like qmail, it's a terrific choice. Fast, secure, flexible,
in very widespread use, more mature than Postfix. You're not making
a bad choice. Although I find it hard to imagine a system where a
difference of a meg or two in the source distribution would make or
break you. Disks are so cheap.

If you do go with qmail, I recommend reading
dsill's Life With qmail. Last I saw it's home was
<URL:http://web.infoave.net/~dsill/lwq.html>. And I'm sure it's
linked off the www.qmail.org site somewhere.
