Not that I know of, not in Mutt directly.
You could set your $editor make a script that first calls your editor,
and then when the editor exits, it strips the original signature and
replaces that with the one you want. Or even set Mutt to not include
any signature at all and do this at the end of the editor script.
Depending on how long you spend at the compose menu, that could be
accurate to within few seconds...
However this might lead to some tricky issues like your own signature
possibly getting added to alias files and/or existing messages with the
edit-message function, and so on. You may want to create a macro for
sending mail which uses your custom $editor only for sending new email
and replying, or something.
