Anything you can do in the .muttrc you can do while in a running Mutt,
using ':' (default keybinding). If you want to change the From: header
permanently, use
:my_hdr From: whatever
You could bind a macro to do ':my_hdr From:' which would leave you to type
in the rest and then hit enter. Or if you have a few you switch between,
you could do the whole thing as a macro. But if you're changing it often,
you've probably got a situation that would be better dealt with using
folder-hooks or send-hooks. See the manual.
