Ok, getting somewhere. There seems to be some kind of 
initialization/time/order dependency:

After a reboot with the composite connected I could capture/play from 
composite. S-Video didn't work.

After a reboot with S-Video only connected I could capture/play from S-Video 
as well.

I would not be sursprised if it's a typical SuSE issue. Although in general 
SuSE is a very stable and mature platform, over the years I've discovered 
that funny things can occur on SuSE. Sometimes you have to go the extra mile 
to figure out how things work.  Just the same it could be the Hi8 camcorder. 
Perhaps it's shutting off one channel if the other's connected. Anyways, 
that's all becoming irrelevant aftermath now.
