I don't think the MacOS partition can be avoided. One reason is
that OpenBSD relies on the MacOS installation for firmware files.

There is a segment somewhere in this talk which explains how the dual-boot
process works:

The gist is that dual-boot only works because apple allowed it to work,
with some inherent limitations.
