I don't think the MacOS partition can be avoided. One reason is that OpenBSD relies on the MacOS installation for firmware files. There is a segment somewhere in this talk which explains how the dual-boot process works: https://media.ccc.de/v/39c3-asahi-linux-porting-linux-to-apple-silicon The gist is that dual-boot only works because apple allowed it to work, with some inherent limitations.
