Hi Davide,

On-premise Exchange does not have support for DKIM.

There are third party plug-ins for Exchange which do DKIM but they are
normally not an option for many organisations due to support and compliance
reasons.

Run DKIM on something in front of Exchange, like your "smaller and leaner
MTA" or a hosted service such as Exchange Online Protection.
