I don't know about the Davmail part, but if Davmail can map categories to IMAP keywords then you should be able to see them by enabling the “Raw Flags” column in the message list. If you see these IMAP keywords then go to the Tags settings pane in MailMate and try mapping a tag name to one of the IMAP keywords (the tag name does not have to be the same as the IMAP keyword). Finally, try tagging/untagging and see if it synchronizes with categories on the server. And also, try changing categories to see if they synchronize to MailMate.
