The [2.0BETA](http://updates.mailmate-app.com/2.0/archives/MailMate2Beta.tbz) has a menu item for removing attachments (Message menu). This also works when selecting multiple emails.
(There's also the `removeAttachments:` key binding selector which I believe works in 1.x as well.)
