That's very odd. When my mother got her iPhone, I was on the phone with Apple about 29 days later and the asked if I wanted Apple Care. They said that, if I did, I would have to purchase it within a day or I would be ineligible, and subsequent conversations with Apple Support have reinforced that rule.
