Hello Maria, What problems are you having with creating tables in a document? I can create tables in Pages quite easily. I just insert a table using the Insert menu, then select the table which shows up as a highlighted space to VoiceOver and set it to Floating in the Wrap inspector. After that, the table is completely accessible as a separate item on the page.
When I've finished editing the table, I just change it back to Inline in the Wrap inspector. I adjust the size of the table using the Metrics inspector as I would for any other item on the page.
