Sorry, I can't help being a bit sarcastic when it comes to ITunes.  I really 
think switching to vlc is good advice.  I just can't stand anything about 
ITunes.  It seems to have worked for you too, so hopefully we're good.

As far as getting the music onto your phone, there's dropbox, ICloud, that 
program that was free for a weekend a few weeks ago which let you browse your 
phone in an explorer on your computer…  ITunes is not the tour de force it used 
to be.  Apparently I'm not the only one who thinks it's awful.  :)

You do need to install flac support for your I device though if you want to 
play the tunes on your phone without converting.  I haven't checked out ways 
for doing that in a couple of years, but some one probably has an answer.
