I am a full time mac user myself and often do audio and video work (some of what I have done is on youtube at www.youtubemcom/visionlessone).
the applications I use: 1. iMovie (voiceover friendly) 2. garage band (voiceover friendly) 3. mars edit (voiceover friendly blogging client) 4. menu tab pro (voiceover friendly Facebook client) 5. yoruthukuru (voiceover friendly twitter client) 6. apple mail (voiceover friendly and included with OS X) 7. textedit (default text editing package) 8. safari web browser and many more.
