Call me crazy, but I really like Apple Reader for that purpose. I find it really useful. I can just open the context menu on a link on my Mac, add it to reader, and then read it later on my iPhone. I know Instapaper looks really pretty, but I'm not sure how this would benefit a VoiceOver user. I've heard that it allows for offline reading, which I guess is a good advantage, but my iPhone gets internet pretty much wherever I am, and the articles are relatively so small I'm not concerned about the data consumption.
