Let me take this in a couple parts.  First of all, The iOS mail client
handles gmail stuff pretty well; just make sure the option for
archiving is turned off; this will give you a delete button instead.
It sounds like you are doing that part already.  Now, there's nothing
wrong with trash going into the proper trash folder on the gmail IMAP
server because they purge out old trash on a regular basis and I think
you can forcably empty the trash earlier than the usual 30 days or
whatever.  I have personally never run into space problems due to a
heavy amount of trash sitting around.

With the Mac side, configuring Mail on the Mac is a bit tricky to make
all trash go to the grash folder on the server.  I know, you said you
didn't wanna have trash to there but gmail manages emptying the trash
automatic and basically no bother for us users.

Asside from all that, if you do really want to have trash stored on
the local disk (on the Mac), then I beleive there is an option to
empty trash folders on program exit.  Sorry I don't have any more
specific info than that.
