Okay, found the choice. In the second screen of the dialog, I discovered
that VO wasn't landing in the start of the dialog. So lo and behold, I
did VO-left-arrow and there was the button which said pop. So I changed
it to imap. I then completed the account creation and all of my folders
which I'd created on my pop account were still there. None of the
folders I've recently created on the server show up except that second
sent mail box. Is there a place deep down where previous activities have
been stored? Should I manually remove all folders and rules before I
remove the account to see if that helps? Is there another setting in
Lion that I don't know about in terms of how it talks to the server? Thanks.

Yes, I am positive that the account supports imap as I have it running
on my PC now. Plus, it did sort of create an imap account and I know
this because I can send on my Mac in an imap account whereas I can not
always send in pop mail. It's a lion bug and this is one of the reasons
I am trying to change. But yes, a hundred per cent positive the account
can do imap.

account a second time and shut down the computer again. But again, in the
account creation dialogs, there was no question about choosing imap or pop.
Somehow I get the feeling it's not really deleting what had been there and I'm
ending up with a bit of a mess. Any suggestions would sure be appreciated at
this point.
After all, this was partly why I was supposed to join the 21st century and
switch to imap, so everything would just automatically appear on all computers.
Hmmm, as I said, all the wisdom here is so much appreciated. I'll keep
searching articles and such to see if I find some miraculous solution as well.
