The commands are in the Format menu, under Table. In the submenu, quite a way 
down, you'll find Convert table to text, and Convert text to table. You can set 
your own short cut in System Preferences, Keyboard tab. You just add an 
application short cut.

No problem. Copy the blank columns, too. I just said to copy the rows and 
columns you need and to exclude the superfluous ones. Once the table is in 
Pages, VO users can't modify it.
