No. It sounds as though you're doing the right thing.

No, it won't save in Word.

It shouldn't be an image, but it's a kind of dynamic element that VoiceOver 
can't read. However, if you use the command that converts the table to text, 
you can check it and then press Cmd-z to undo that command without damaging the 
layout, as long as you don't change anything.

I've created short cuts for the commands to convert table to text, and to 
convert text to table to make things easier. Alternatively, you can use the 
command to copy the selection into a new textEdit window so that you can check 
your table.

I hope I haven't confused you further.
