Hello Alex, If you want the VO commands to work in a text document, you have to interact with the text area, otherwise, you can only use the native Mac commands.
You can find all the VO commands by pressing VO-h-h (hold down the VO keys and press the letter h twice). The commands are organised into submenus, and each one is shown with its key combination if it has one. You can create your own shortcuts for any VO command using one of the commanders, which are to be found in the VoiceOver Utility, category Commanders.
