THERE WAS AN ANSWER POSTED EARLIER, YOU HAVE 2 CHOICES. 1. WHEN QUITTING THE APPLICATION HIT OPTION ALONG WITH COMMAND-Q AND IT WILL GO BACK TO THE DEFAULT STATE.
2. UNDER THE GENERAL TAB OF SYSTEM PREFERENCES, THERE IS A CHECKBOX TO TOGGLE THE BEHAVIOR OF PREVIOUS WINDOWS OPENING WHEN YOU RESTART AN APP. MY BIGGEST ISSUE NOW IS WITH THE ITEM CHOOSER WHICH I HAVE GROWN TO LOVE AND IS COMPLETELY UNRELIABLE UNDER LION.
