Eric,

You can open the xml file and read using Safari. You also have the option of 
opening the file, perform a select all using command-a, and paste the contents 
into a file using something like Textedit. Save that file as an rtf and use a 
program such as stanza to convert to an epub format. That was one suggestion 
provided to me and it works very well. Others may have additional thoughts, but 
this is one that will work and iBooks can handle the epub format. You just add 
the files via iTunes.
