I vaguely remember in the past when I delved into Disk Utility and
deleted snapshots. Don't remember why but its been ages since I had
issues and the snapshot table is empty which is good.

You should be able to remove these with disk utility.
I haven’t tried what you are doing, I am just taking my understanding of
computers for a ride.
AI will probably give you a better answer but it might be worth checking if you
have snapshots.
