As for your second, I'd be running windoweyes, Duxbury, openbook, humaware stream companion, and maybe, ms word 2007. I would not see the need to run outlook 2007, though this would mean I couldn't sync my braillenote.
Itunes and a mail program along with iworks would be on the apple side of things.
