First of all, you can make a backup of all your iTunes purchases, including your apps, to DVD or CD. The option's on your menu bar in File > Library > Back up to Disc. You probably don't want to back up your whole library to disc, but I find it very convenient to just write purchases to DVD every so often, since this also includes all apps I have purchased. You have the option to back up your entire library and playlists, just your iTunes purchases, or just items in either category that were added since a previous back up.

I don't think you need to uninstall iTunes. At least, I would check over some files first. Usually, there is only a specific item that is causing iTunes to crash. What happens when you repair permissions? The other thing to try after quitting iTunes is moving your com.apple.iTunes.plist file to your Desktop or other location and letting iTunes create another version. These are in your Library/ Preferences folder and Library/Preferences/By Host folder under your account. If moving the preference files and deleting the copies in your Library/Preferences and Library/Preferences/By Host folders doesn't help when your restart iTunes, you can copy the originals back. Deleting preferences won't lose you any apps or settings.

I'd also check for problematic recent download files.

Hi.

Suddently my Itunes has started to crash each time I try to start the
application. When i try to open it, I got the user notification window, where I can choose to send a report to Apple, ignore or open the application
again. How do I fix this issue? Can I remove the preferences without
deleting all the music and stuff I have in my Itunes?
I really hope someone can help because I have to sync my Iphone with Itunes
to accept a new provider...
