OK, two completely different questions about Time Machine. 1. I believe in some cases, you can pick an APP or finder window before you start the time Machine process. You will need to experiment a little as I have only recovered one or two items with time machine. 2. You can certainly leave your time machine disk plugged in all the time, the only disadvantage of this is that if a ransom ware attack gets to your computer, there is a good chance they will encrypt all the data on the time machine disk too. Some people keep two time machine disks and swap them weekly. Or you can use another backup strategy in addition to Time Machine. Also, if you have automatic time machine backups turned on, and the time machine disk is not available, time machine will still create APFS snapshots that can be used to save changes once the disk is available again. Yet another reason to make sure you have more free disk space than you really need.
