A Mac with Apple silicon will not run Bootcamp. There are some other options, but there may be some accessibility issues with some of these options. Apple does still sell a Mac mini with an Intel processor, and this Mac will run bootcamp. A Mac mini does not require a monitor to function, however if you want a monitor, pretty much any monitor will work, but be advised that the mini has both a HDMI port, and Thunderbolt ports, so you will need an adapter for some monitors. Another option to consider is the 24” iMac with apple silicon. My wife, who is sighted, has one of these, and it is a very nice option worth considering if you want a Mac with a very good monitor.
If you are considering a new Mac with Apple silicon, I would wait until after the yet to be announced October Apple event, where new Macs are expected to be announced.
