The open dialog is very similar to a finder panel, including having options to switch views with command key. It sounds like you have this as a list view with group by date in place. So pressing command-1 to switch to Icon view or command-3 to switch to column view should help. There are also several folks in the sighted world that like a finder extension called default folder X. This adds additional controls into the open and save dialogs. I have personally never used it. HTH! Jonathan Cohn
