I usually keep my VM's full screen. I think there might be issues with getting VoiceOver to start / be controlled in the VM, but there are probably some work arounds, I seem to remember directions to dedicate a uSB keyboard to the VM to help. I also recently heard from E.T., that he was able to create a second APFS volume on his MacBook to be able to book in both MAcOS 11 and MacOS 12. One can create multiple APFS volumes in a single partition.
