Interesting issue. On the Mac there is a way to adjust outgoing email servers, but on IOS I don't believe that is possible. Assuming, your using IMAP or exchange protocols to read your mail, then all nrcc Mail folder set up is configured and stored on the mail server at Google or iCloud. So, if you delete an account you will not lose that structure.
