First, a US English gripe. IN UNS English, we prefer the word "question" where 
you used doubt.  The word doubt usually has a bit of a negative connotation. In 
other words, I expect this is a bad idea, but feel free to correct me.

I usually use the VO-J command to jump to major areas of an interface, and this 
will work for switching between Mailboxes and messages much like F6 does on 
Windows.
I am not sure what you mean by quoted messages. If you open an entire thread of 
messages though, VoiceOver will generally not speak the quoted portion. In the 
message list you can delete either entire threads or individuals messages.
TO attach a file to e-mail, you can either copy and paste. Go Or use the  
"Attach Files …"  command found in the file menu. On my system there is a 
shortcut for this also.. control-shift-A.
