Hi, Hmmm. In the iMessages tab of Messages Prefs, with Settings selected, you should have your Apple ID and a Sign Out button, then the checkbox for enabling Messages in the Cloud, and one VO-right from that is a "Sync Now" button, then the rest of the items such as the table with the list of iMessage addresses connected with that Apple ID account.
Regarding the left over text from a previous message in the Mac version of Messages, that seems to be a bug or some residual syncing issue. I've seen that one lots as well. I've just got in a habit of making sure to check that the field is empty before typing and sending. I've got caught a few times. When in the field, I just do a cmd-a to select all, then press the Delete key. Later...
