Paul On your first point I’m actually not sure, I never had email boxes other than iCloud, Google and Microsoft and with them I only enter username and passwords then everything gets downloaded from the servers again. What mailboxes are you referring to?
On your second point yes simply copy and pasting applications out of the applications folder should work, but you’ll anyway have to activate them again with licence keys. For example with VMware Fusion you’ll have to enter your licence key again even if you copy the file to your new Mac.
