I'm catching up on some old mail and didn't see a reply to this.
While you could output your DVD video via the Apple NTSC/S-Video adaptor, usually that signal includes an encoding called macrovision which spoils the recording to prevent piracy. I believe some programs out there allow you to turn off Macrovision protection which then means you could hit record on your VCR and play on your video and make a perfectly good copy. Legality of doing so is questionable.
