The feature you are describing is called iMessage Forwarding. It is a wonderful feature that applies to non-iMessage SMS. This feature does not apply to Apple Watch, however. Under Messages, there's an option to have messages received on your phone go to all devices signed in with that Apple ID. Seems like unchecking that might solve your problem. I think Simon is right. The problem is that by default your messages go to all devices signed in with your Apple ID. But there is a way to stop it, I did it with my old iPod Touch, which I only use as a music player.
