It looks like your Mini should handle the drive. So, I'm wondering if the Mini is trying to index the external drive for Spotlight purposes and the Mini is taxed a little while this is happening. Try plugging in the drive at night before going to bed, and leave it plugged in all night. Allow the Mini to do whatever it needs done while you're sleeping and see if it is behaving better in the morning.
