Hi Becky, I can speak for the iPhone and iPad and activating it on all three devices but for using it on the mac I can’t really say.
On the iPhone and ipad you need to download the installers from the app store, Once installed you can either use them un activated which gives you read only access to documents and the same on the mac os, If you have paid for an office 365 licence you can then activate the software with yoru setup email account or Microsoft account and then it is simply a case of opening the office products on your IOS device and following the prompts, You can on the IOS devices setup access to your dropbox or one drive cloud storage to or from where you can save or open your files, There is a get started button which then gives you a number of templates for word documents or excel spread sheets, Oh yeah, each of the office apps is individual word excel powerpoint and one note or sway which is a new one. There is also an outlook app now but it’s not part of the office 365 suite on fthe IOS devices. Other than that it’s simple enough you just have to follow the prompts or trigger the menus I do find though that using an external keyboard makes life easier when writing documents or using excel. On the mac os I can’t say I’ve done anything more than activate the software, I have tended this far to use office within windows. Hope that helps.
