The Watch uses wifi only if it is on the same network as your phone. This way you can go out of bluetooth range but if you’re on the same network, you can still use many of the Watch features. This works for me primarily when I go to my main workplace from my home office. the wifi is the same throughout the building so things like Siri still work even if my phone is out of range.
