A few comments:

1. On Windows fillable forms were apparently accessible in MS Word 2007 and 
earlier, but not in Word 2010. Not sure about later versions. I only tried this 
with Word 2010 and it was not pretty.

2. PDFPen version 6.3 and later can be used by VoiceOver users to fill text in 
text fields in interactive PDF forms on the Mac. Checkboxes and pop up menus 
don't seem to be working as yet, but hopefully will be fixed in future versions.

3. Pages can open Word files which have fillable forms. These can be edited by 
VoiceOver users in the same way as any other document, meaning you can easily 
type in the desired text, but you can also mess up the formatting.
